- 1 whole chicken (about 4–5 lbs)
- 1/2 cup unsalted butter, softened
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons fresh parsley, chopped
- 4 cloves garlic, minced
- 1 lemon, halved
- 1 onion, quartered
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- Optional: vegetables (carrots, potatoes) for roasting
Instructions
- Preheat the oven to 425°F (220°C).
- In a bowl, combine the softened butter, chopped herbs, and minced garlic.
- Pat the chicken dry with paper towels and loosen the skin over the breast with your fingers.
- Spread half of the herb butter mixture under the skin and the rest over the surface of the chicken.
- Season the chicken generously with salt and pepper inside and out.
- Stuff the cavity with lemon halves and onion quarters.
- Place the chicken in a roasting pan. If using, scatter vegetables around the chicken and drizzle with olive oil.
- Roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
- Let the chicken rest for 10-15 minutes before carving.
- Serve warm with roasted vegetables and pan juices.
Notes
- Use room-temperature butter for easier mixing and spreading.
- For extra crispy skin, allow the chicken to air-dry uncovered in the fridge for a few hours before roasting.
- Leftovers can be used in sandwiches, soups, or salads.
