Peach Crisp with Oats

A warm and comforting peach crisp made with fresh peaches and a buttery oat topping. Perfect for summer desserts and best served with a scoop of vanilla ice cream.

  • 6 cups fresh peaches, peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp cornstarch
  • 3/4 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cut into small pieces

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with granulated sugar, lemon juice, vanilla extract, and cornstarch. Transfer to a greased 9×9-inch baking dish.
  3. In another bowl, combine oats, flour, brown sugar, cinnamon, and salt. Add cold butter and mix with a pastry cutter or fingers until the mixture resembles coarse crumbs.
  4. Sprinkle the oat topping evenly over the peaches.
  5. Bake for 35–40 minutes or until the topping is golden brown and the peach filling is bubbly.
  6. Let cool slightly before serving. Best enjoyed warm with ice cream or whipped cream.

Notes

  • Use canned or frozen peaches if fresh ones aren’t available; just adjust sugar as needed.
  • Make the topping ahead and store in the fridge for quicker prep.
  • Add a pinch of nutmeg for extra warmth.
