Coconut Lime Slush

A refreshing, frosty blend of creamy coconut and bright lime that comes together in minutes—perfect for cooling off on a hot day.

Ingredients

  • 1 can (13.5 oz) full-fat coconut milk, well-shaken and chilled
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 Tbsp finely grated lime zest
  • 23 Tbsp granulated sugar (or sweetener of choice), to taste
  • 3 cups ice cubes
  • Pinch of sea salt
  • Lime wedges and toasted shredded coconut, for garnish (optional)

Instructions

  1. Shake the chilled coconut milk can to recombine, then pour it into a high-speed blender.
  2. Add the lime juice, lime zest, sugar, sea salt, and ice cubes.
  3. Blend on high until the mixture is smooth and slushy, 30–45 seconds.
  4. Taste and adjust sweetness or lime to preference, blending briefly to incorporate.
  5. Pour into two chilled glasses, garnish with lime wedges and a sprinkle of toasted coconut if desired, and serve immediately.

Notes

  • Swap sugar for coconut syrup, honey, or agave for a different sweetness profile.
  • Add 1 oz white rum per glass for an adults-only version.
  • For an extra-thick texture, freeze the coconut milk in an ice-cube tray ahead of time and use those cubes in place of some of the ice.
  • Light coconut milk works if you prefer a lower-calorie drink, though the slush will be slightly less creamy.
