1/2 cup (1 stick) unsalted butter
6 oz semi-sweet or bittersweet chocolate, chopped
2 large eggs
2 large egg yolks
1/4 cup granulated sugar
1/8 tsp salt
2 tbsp all-purpose flour
Butter and cocoa powder for greasing ramekins
Optional: powdered sugar, whipped cream, or berries for serving
Instructions
Preheat oven to 425°F (220°C). Butter and lightly dust 4 ramekins with cocoa powder; place on a baking sheet.
Melt the butter and chocolate together in a heatproof bowl over a saucepan of simmering water (double boiler method). Stir until smooth and remove from heat.
In a separate bowl, whisk together eggs, egg yolks, sugar, and salt until thick and pale.
Fold the melted chocolate mixture into the egg mixture until combined.
Sift the flour into the mixture and gently fold until smooth.
Divide the batter evenly among the prepared ramekins.
Bake for 12–14 minutes until the edges are firm but the centers are still soft.
Let the cakes rest for 1 minute, then run a knife around the edges and invert onto plates.
Serve immediately, optionally dusted with powdered sugar or topped with whipped cream and berries.
Notes
You can prepare the batter ahead and refrigerate; bring to room temperature before baking.
Do not overbake or the center will lose its molten texture.
