- 1 lb boneless, skinless chicken thighs
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Juice of 1 lime
- 1/4 cup chopped fresh cilantro
- 8 small corn tortillas
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro (for garnish)
- 1/2 cup crumbled cotija cheese (optional)
- 1 lime, cut into wedges
- In a bowl, mix olive oil, garlic, chili powder, cumin, paprika, onion powder, salt, pepper, and lime juice.
- Add chicken thighs to the marinade and coat evenly. Let marinate for at least 30 minutes.
- Heat a skillet over medium-high heat. Cook marinated chicken for 5–6 minutes per side or until cooked through.
- Remove chicken from heat, let rest for 5 minutes, then chop into small pieces.
- Warm corn tortillas in a dry skillet or microwave.
- Assemble tacos by filling tortillas with chopped chicken, diced onion, and chopped cilantro.
- Top with cotija cheese if using and serve with lime wedges.
