Chicken Nachos

- 3 cups cooked shredded chicken
- 1 tablespoon taco seasoning
- 1/4 cup water
- 1 bag tortilla chips (about 10–12 oz)
- 2 cups shredded cheddar cheese
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels
- 1/4 cup sliced black olives
- 1/4 cup diced red onion
- 1–2 jalapeños, sliced
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream (optional)
- 1/2 cup salsa or pico de gallo
- 1 avocado or guacamole
- Preheat oven to 400°F (200°C).
- In a skillet over medium heat, mix shredded chicken with taco seasoning and water. Cook for 5 minutes until heated and well combined.
- Spread tortilla chips evenly on a large baking sheet or oven-safe dish.
- Top chips with seasoned chicken, cheese, black beans, corn, red onion, olives, and jalapeños.
- Bake in the oven for 10-15 minutes until cheese is melted and bubbly.
- Remove from oven and sprinkle with fresh cilantro.
- Top with sour cream, salsa, and avocado or guacamole before serving.
Notes
- You can substitute rotisserie chicken for convenience.
- Add or omit toppings based on your preferences.
- Serve immediately to enjoy maximum crispiness.
