Chicken Nachos

A delicious and easy-to-make appetizer or meal featuring tortilla chips topped with seasoned shredded chicken, cheese, and your favorite toppings.

Ingredients

  • 3 cups cooked shredded chicken
  • 1 tablespoon taco seasoning
  • 1/4 cup water
  • 1 bag tortilla chips (about 1012 oz)
  • 2 cups shredded cheddar cheese
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 12 jalapeños, sliced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream (optional)
  • 1/2 cup salsa or pico de gallo
  • 1 avocado or guacamole

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet over medium heat, mix shredded chicken with taco seasoning and water. Cook for 5 minutes until heated and well combined.
  3. Spread tortilla chips evenly on a large baking sheet or oven-safe dish.
  4. Top chips with seasoned chicken, cheese, black beans, corn, red onion, olives, and jalapeños.
  5. Bake in the oven for 10-15 minutes until cheese is melted and bubbly.
  6. Remove from oven and sprinkle with fresh cilantro.
  7. Top with sour cream, salsa, and avocado or guacamole before serving.

Notes

  • You can substitute rotisserie chicken for convenience.
  • Add or omit toppings based on your preferences.
  • Serve immediately to enjoy maximum crispiness.
