- 4 cups mashed sweet potatoes (about 4–5 medium sweet potatoes)
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, softened
- 1 cup chopped pecans
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large mixing bowl, combine mashed sweet potatoes, granulated sugar, eggs, milk, melted butter, vanilla extract, and salt. Mix until smooth.
- Pour the sweet potato mixture into the prepared baking dish and spread evenly.
- In a separate bowl, mix together flour, brown sugar, and softened butter until crumbly. Stir in the chopped pecans.
- Sprinkle the pecan crumble evenly over the sweet potato mixture.
- Bake for 30-35 minutes, or until the top is golden brown and the casserole is heated through.
- Allow to cool slightly before serving.
Notes
- You can prepare the casserole a day ahead and bake it before serving.
- For a sweeter version, add a bit of maple syrup to the sweet potato mixture.
- Use canned sweet potatoes for convenience, but reduce the added sugar if already sweetened.
