- 4 cups pitted and halved fresh red cherries (about 22 ounces)
- ⅓ cup water
- ½ cup granulated sugar
- 2 teaspoons lemon juice
- 2–4 tablespoons Amaretto liqueur
- 1½ cups heavy cream
- 16 ounces mascarpone cheese
- ¾ cup granulated sugar
- ⅔ cup cherry syrup (reserved from above)
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 (7 oz) package Savoiardi ladyfingers (about 24)
Instructions
- Prepare the cherry syrup: In a medium saucepan, combine cherries, water, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until cherries break down and syrup thickens, about 10 minutes. Remove from heat, stir in Amaretto, and let cool completely.
- Make the mascarpone filling: In a bowl, whip heavy cream to soft peaks. In a separate bowl, whisk together mascarpone, ¾ cup sugar, ⅔ cup cooled cherry syrup, vanilla extract, and almond extract until smooth. Gently fold whipped cream into the mascarpone mixture until fully combined.
- Assemble the tiramisu: Briefly dip each ladyfinger into the cooled cherry syrup (with Amaretto), then arrange a single layer in the bottom of an 8×8″ dish.
- Spoon half of the mascarpone filling over the ladyfingers and spread evenly.
- Repeat with another layer of dipped ladyfingers and the remaining mascarpone filling. Smooth the top.
- Cover and refrigerate for at least 6 hours or overnight to set. Dust with cocoa powder and garnish with fresh cherries before serving, if desired.
Notes
- Can be made up to one day in advance; flavors deepen with time.
- Use ripe, in-season cherries for best flavor.
- Substitute dark rum or brandy for Amaretto if preferred.
- For individual servings, assemble in small glasses or jars.
