White Chocolate Lava Cake

A rich and indulgent dessert featuring a soft white chocolate cake exterior with a gooey molten white chocolate center. Perfect for special occasions or a luxurious treat.

  • 6 oz (170g) white chocolate, chopped
  • 1/2 cup (115g) unsalted butter
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (30g) all-purpose flour
  • 1/4 tsp salt
  • Butter and flour for greasing ramekins

Instructions

  1. Preheat oven to 425°F (220°C). Grease 4 ramekins with butter and lightly dust with flour.
  2. In a heatproof bowl over simmering water, melt the white chocolate and butter together. Stir until smooth and set aside to cool slightly.
  3. In a medium bowl, whisk together the eggs, egg yolks, and sugar until light and thick.
  4. Slowly whisk the melted chocolate mixture into the egg mixture until well combined.
  5. Gently fold in the flour and salt until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 12–14 minutes, or until the edges are set and the center is still soft.
  8. Let cakes cool for 1 minute, then carefully invert onto plates.
  9. Serve immediately, optionally with berries or whipped cream.

Notes

  • Do not overbake or the center will not be molten.
  • Use high-quality white chocolate for the best flavor.
  • Cakes can be made ahead and stored in the fridge; bring to room temp before baking.
