Watermelon Mint Cooler
A refreshingly light, fruit-forward summer drink made by blending juicy watermelon with fresh mint and zesty lime, then finishing with sparkling water for a fizzy lift.

- 4 cups (about 600 g) seedless watermelon, diced and chilled
- 12 fresh mint leaves, plus extra sprigs for garnish
- 2 Tbsp (30 ml) fresh lime juice
- 1–2 Tbsp honey or agave syrup, to taste (optional)
- 1 cup (240 ml) chilled sparkling water or still water
- Ice cubes, for serving
- Thin lime wheels, for garnish (optional)
- Chill two tall glasses in the refrigerator while you prepare the cooler.
- Add the diced watermelon, mint leaves, lime juice, and honey (if using) to a blender. Blend on high until completely smooth, about 30 seconds.
- For an extra-silky texture, pour the mixture through a fine-mesh sieve into a jug, pressing gently with a spoon; discard pulp. (This step is optional.)
- Stir in the chilled sparkling water.
- Fill the prepared glasses with ice. Pour the watermelon mixture over the ice, garnish with mint sprigs and lime wheels, and serve immediately.
Notes
- Taste the watermelon first—very sweet fruit may not need added sweetener.
- Swap sparkling water for lemon-lime soda if you prefer extra sweetness and fizz.
- For a cocktail version, add 1½ oz (45 ml) white rum, gin, or vodka per glass.
- The blended base (without sparkling water) can be refrigerated up to 24 hours; add bubbles just before serving.
