Watermelon Mint Cooler

A refreshingly light, fruit-forward summer drink made by blending juicy watermelon with fresh mint and zesty lime, then finishing with sparkling water for a fizzy lift.

Ingredients

  • 4 cups (about 600 g) seedless watermelon, diced and chilled
  • 12 fresh mint leaves, plus extra sprigs for garnish
  • 2 Tbsp (30 ml) fresh lime juice
  • 12 Tbsp honey or agave syrup, to taste (optional)
  • 1 cup (240 ml) chilled sparkling water or still water
  • Ice cubes, for serving
  • Thin lime wheels, for garnish (optional)

Instructions

  1. Chill two tall glasses in the refrigerator while you prepare the cooler.
  2. Add the diced watermelon, mint leaves, lime juice, and honey (if using) to a blender. Blend on high until completely smooth, about 30 seconds.
  3. For an extra-silky texture, pour the mixture through a fine-mesh sieve into a jug, pressing gently with a spoon; discard pulp. (This step is optional.)
  4. Stir in the chilled sparkling water.
  5. Fill the prepared glasses with ice. Pour the watermelon mixture over the ice, garnish with mint sprigs and lime wheels, and serve immediately.

Notes

  • Taste the watermelon first—very sweet fruit may not need added sweetener.
  • Swap sparkling water for lemon-lime soda if you prefer extra sweetness and fizz.
  • For a cocktail version, add 1½ oz (45 ml) white rum, gin, or vodka per glass.
  • The blended base (without sparkling water) can be refrigerated up to 24 hours; add bubbles just before serving.
