 - 1 cup ube halaya (purple yam jam)
 - 1/2 cup sour cream
 - 1/2 cup heavy cream
 - 3 large eggs
 - 1 tsp vanilla extract
 - 1/2 tsp ube extract (optional, for deeper color and flavor)
 
Instructions
- Preheat the oven to 325°F (163°C). Prepare a 9-inch springform pan by lining the bottom with parchment paper and wrapping the outside with foil to prevent water leakage.
 - In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press firmly into the bottom of the pan to form the crust. Bake for 10 minutes and set aside to cool.
 - In a large bowl, beat the softened cream cheese until smooth and creamy. Add 1 cup sugar and continue beating until well combined.
 - Mix in ube halaya, sour cream, heavy cream, vanilla extract, and ube extract. Blend until smooth.
 - Add eggs one at a time, mixing just until incorporated. Do not overmix.
 - Pour the cheesecake batter over the cooled crust and smooth the top with a spatula.
 - Place the springform pan in a larger baking dish filled with hot water to create a water bath.
 - Bake for 55-65 minutes, or until the center is slightly jiggly but the edges are set.
 - Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
 - Remove from oven and refrigerate for at least 4 hours or overnight before serving.
