Vegetable Masala Maggi

A quick and flavorful twist on instant noodles cooked with vegetables and Indian spices, making it a wholesome and delicious comfort meal.

Ingredients

  • 2 packs Maggi noodles (or instant noodles)
  • 1 tbsp oil
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1/2 cup capsicum, diced
  • 1/2 cup carrots, diced
  • 1/2 cup green peas
  • 2 green chilies, slit
  • 1 tsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 tsp cumin seeds
  • 2 cups water
  • Maggi tastemaker masala (from the noodle packet)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Heat oil in a pan and add cumin seeds. Let them splutter.
  2. Add onions and sauté until golden brown.
  3. Stir in ginger-garlic paste and green chilies, cook for a minute.
  4. Add tomatoes and cook until soft and mushy.
  5. Mix in turmeric, red chili powder, and garam masala. Stir well.
  6. Add carrots, peas, and capsicum. Cook for 3–4 minutes until slightly tender.
  7. Pour in 2 cups of water and bring it to a boil.
  8. Add Maggi noodles (without the tastemaker) and cook for 2 minutes.
  9. Stir in the Maggi tastemaker masala and salt. Mix well and let it cook until noodles are done and coated with masala.
  10. Garnish with fresh coriander and serve hot.

Notes

  • You can add any vegetables of your choice like corn, beans, or mushrooms.
  • Adjust spice levels as per your preference.
  • For a creamier version, add a spoonful of butter at the end.
  • Serve immediately for the best taste.
