Unicorn Pastel Cake

A whimsical and colorful unicorn pastel cake perfect for birthdays and celebrations, featuring layers of soft sponge cake in pastel hues and topped with a magical buttercream frosting.

  • 2 ½ cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 cup whole milk
  • Gel food coloring (pink, blue, purple, yellow)
  • 2 cups unsalted butter (for frosting)
  • 5 cups powdered sugar (for frosting)
  • 23 tbsp heavy cream (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • Sprinkles, edible glitter, and fondant decorations (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line four 6-inch round cake pans.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the flour mixture.
  6. Divide batter evenly into four bowls and color each with a different pastel gel food coloring.
  7. Pour each colored batter into the prepared pans and bake for 20–25 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. To make frosting, beat butter until creamy, then gradually add powdered sugar. Add vanilla and heavy cream to reach desired consistency.
  10. Assemble the cake by layering the colored cakes with buttercream in between. Cover the entire cake with a crumb coat, chill, then apply final coat.
  11. Decorate with piped buttercream swirls, sprinkles, glitter, and fondant unicorn features.

Notes

  • You can use 8-inch pans if preferred; adjust baking time accordingly.
  • Chill cake layers before assembling for easier stacking and frosting.
  • Gel food coloring is preferred for vibrant pastel colors without altering batter consistency.
