Unicorn Birthday Cake

A whimsical and colorful unicorn birthday cake featuring layers of moist vanilla cake, buttercream frosting, and vibrant rainbow decorations. Perfect for kids’ parties and magical celebrations.

  • 3 cups all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tbsp vanilla extract
  • 1 ½ cups whole milk
  • Gel food coloring (pink, blue, purple, yellow, etc.)
  • 4 cups buttercream frosting (homemade or store-bought)
  • Sprinkles and edible glitter (optional)
  • Fondant unicorn horn and ears (optional, for decoration)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Alternately add the flour mixture and milk, starting and ending with flour. Mix until just combined.
  6. Divide batter evenly into separate bowls and tint each with a different food coloring.
  7. Pour colored batters into the prepared pans and swirl gently with a knife for a marbled effect, or layer if desired.
  8. Bake for 25–30 minutes or until a toothpick comes out clean. Let cakes cool completely.
  9. Level cake layers if needed. Spread buttercream between layers, then frost the entire cake.
  10. Decorate with fondant unicorn horn and ears, and add sprinkles or edible glitter as desired.

Notes

  • Use gel food coloring for vibrant colors without thinning the batter.
  • Chill cake layers before assembling to reduce crumbs in the frosting.
  • Customize colors and decorations to match the party theme.
