Ube Cheesecake Overnight Oats

A creamy, vibrant, and nutritious breakfast option inspired by the flavors of ube cheesecake. These overnight oats are made with wholesome ingredients and are perfect for meal prepping.

  • 1/2 cup rolled oats
  • 1/2 cup milk of choice
  • 1/4 cup Greek yogurt or cream cheese
  • 2 tbsp ube halaya (purple yam jam)
  • 1 tbsp chia seeds
  • 12 tsp maple syrup or sweetener of choice (optional)
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • Optional toppings: crushed graham crackers, coconut flakes, more ube halaya

Instructions

  1. In a jar or bowl, combine rolled oats, milk, Greek yogurt or cream cheese, ube halaya, chia seeds, maple syrup, vanilla extract, and a pinch of salt.
  2. Mix well until fully combined and the mixture is smooth and evenly colored.
  3. Cover and refrigerate overnight or for at least 4 hours.
  4. In the morning, give the oats a good stir. Add more milk if a thinner consistency is desired.
  5. Top with optional toppings like crushed graham crackers, coconut flakes, or extra ube halaya before serving.

Notes

  • You can use plant-based yogurt and milk to make it vegan.
  • Adjust sweetness to taste based on your ube halaya and preference.
  • For a cheesecake flavor, use cream cheese instead of Greek yogurt.
