Turkish Gözleme

Turkish gözleme is a traditional savory flatbread made with a simple dough, filled with various ingredients like spinach, cheese, or minced meat, then cooked on a griddle until golden and crisp.

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 3/4 cup water (approx.)
  • 2 tbsp olive oil (plus more for cooking)
  • 1 cup feta cheese, crumbled
  • 1 cup fresh spinach, chopped
  • 1 small onion, finely chopped
  • 1/4 tsp ground black pepper

Instructions

  1. In a large bowl, combine the flour and salt. Gradually add water and olive oil, mixing until a soft dough forms.
  2. Knead the dough on a lightly floured surface for 5–7 minutes until smooth and elastic. Cover and let rest for 20 minutes.
  3. In a separate bowl, mix the feta cheese, spinach, onion, and black pepper to make the filling.
  4. Divide the dough into 4 equal portions. Roll each portion into a thin circle or oval.
  5. Spoon some filling onto half of each rolled dough piece, then fold over to enclose, pressing edges to seal.
  6. Heat a large skillet or griddle over medium heat. Brush lightly with olive oil.
  7. Cook each gözleme for 2–3 minutes per side until golden brown and crisp.
  8. Serve warm, cut into wedges.

Notes

  • You can experiment with different fillings like minced beef, mushrooms, or potatoes.
  • For a softer texture, cook with a lid on for part of the time.
  • Traditionally, gözleme is made without yeast, keeping the dough thin and crisp.
