Tropical Pineapple Ginger Punch Recipe

- 4 cups (946 ml) chilled pineapple juice
- 2 cups (473 ml) chilled coconut water
- 1 cup (237 ml) chilled ginger ale or ginger beer
- 1⁄4 cup fresh lime juice (about 2 limes)
- 2 Tbsp fresh ginger, thinly sliced
- 2 Tbsp honey or simple syrup, to taste (optional)
- 2 cups ice cubes
- Pineapple wedges & lime wheels, for garnish
- Fresh mint sprigs, for garnish (optional)
- In a large pitcher or punch bowl, muddle the sliced ginger with the honey/simple syrup to release its flavor.
- Pour in the pineapple juice, coconut water and lime juice; stir well to combine.
- Add the ice cubes to chill the punch thoroughly.
- Just before serving, gently stir in the chilled ginger ale to retain its fizz.
- Taste and adjust sweetness or acidity as desired.
- Ladle into ice-filled glasses and garnish with a pineapple wedge, lime wheel and mint sprig.
Notes
- For an adult version, swap 1 cup of coconut water for 1 cup coconut rum.
- Use sparkling water in place of ginger ale for a less sweet drink.
- The punch base (steps 1–2) can be prepared up to 24 hours ahead; add ice and ginger ale just before serving.
- Strain out the ginger slices if you prefer a clear presentation.
