Tropical Fruit Tart

A vibrant and refreshing tropical fruit tart featuring a buttery crust, creamy custard filling, and a colorful array of fresh tropical fruits. Perfect for summer gatherings or as a light dessert.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon unsalted butter
  • 1 kiwi, peeled and sliced
  • 1 mango, peeled and sliced
  • 1/2 cup pineapple chunks
  • 1/2 cup strawberries, sliced
  • 1 tablespoon apricot jam (optional, for glaze)
  • 1 teaspoon water (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a tart pan.
  2. In a bowl, mix flour and powdered sugar. Cut in butter until mixture resembles coarse crumbs.
  3. Add egg yolk and cold water. Mix until dough forms. Press into the tart pan and chill for 30 minutes.
  4. Bake crust for 20 minutes or until golden. Cool completely.
  5. In a saucepan, whisk milk, granulated sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly, until thickened.
  6. Remove from heat and stir in vanilla and butter. Let the custard cool slightly, then spread it over the cooled crust.
  7. Arrange kiwi, mango, pineapple, and strawberries on top of the custard.
  8. Optional: Heat apricot jam with water and brush over fruit for a shiny glaze.
  9. Chill tart for at least 1 hour before serving.
