- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 1 cup granulated sugar
- 1/4 cup whole milk
- 1/4 cup unsalted butter
- 1 tsp vanilla extract
- 1 1/2 cups brewed espresso or strong coffee, cooled
- 2 tbsp coffee liqueur (optional)
- 16 oz mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- Unsweetened cocoa powder (for dusting)
- Chocolate shavings or curls (optional)
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat eggs and sugar until light and fluffy, about 5 minutes.
- Heat milk and butter in a small saucepan until butter melts. Stir in vanilla extract.
- Slowly add the flour mixture to the egg mixture, followed by the warm milk mixture. Mix just until combined.
- Divide the batter between the prepared pans and bake for 20–25 minutes, or until a toothpick comes out clean.
- Let cakes cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
- Mix the espresso with coffee liqueur (if using) in a shallow dish.
- In a mixing bowl, beat mascarpone cheese until smooth. In a separate bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Fold whipped cream into mascarpone.
- Slice each cake layer horizontally to make four layers total.
- Place one layer on a serving plate. Brush with coffee mixture, then spread a layer of mascarpone cream over it.
- Repeat with remaining layers, ending with a layer of cream on top.
- Dust the top with cocoa powder and garnish with chocolate shavings, if desired.
- Refrigerate for at least 4 hours or overnight before serving.
Notes
- Use fresh espresso or strong coffee for best flavor.
- Letting the cake sit overnight enhances the flavor.
- Omit coffee liqueur for an alcohol-free version.
