Tex‑Mex Casserole

- 1 lb ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup salsa
- 2 cups shredded cheddar cheese
- 6 flour tortillas
- 1/2 cup sour cream (optional)
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until soft.
- Add ground beef to the skillet and cook until browned. Drain excess fat.
- Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
- In a greased 9×13 inch baking dish, layer 3 tortillas, half of the beef mixture, and 1 cup of shredded cheese.
- Repeat the layers with remaining tortillas, beef mixture, and cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake an additional 10 minutes, or until cheese is bubbly and golden.
- Let rest for 5 minutes before slicing. Serve with sour cream and garnish with cilantro if desired.
Notes
- You can substitute ground turkey or chicken for beef.
- Use gluten-free tortillas for a gluten-free option.
- Add jalapeños for extra heat if desired.
