Tex‑Mex Casserole

A hearty and flavorful Tex-Mex casserole layered with seasoned beef, beans, corn, cheese, and tortillas, perfect for a quick weeknight dinner.

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • 6 flour tortillas
  • 1/2 cup sour cream (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until soft.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in taco seasoning, black beans, corn, diced tomatoes with green chilies, and salsa. Simmer for 5 minutes.
  5. In a greased 9×13 inch baking dish, layer 3 tortillas, half of the beef mixture, and 1 cup of shredded cheese.
  6. Repeat the layers with remaining tortillas, beef mixture, and cheese.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake an additional 10 minutes, or until cheese is bubbly and golden.
  9. Let rest for 5 minutes before slicing. Serve with sour cream and garnish with cilantro if desired.

Notes

  • You can substitute ground turkey or chicken for beef.
  • Use gluten-free tortillas for a gluten-free option.
  • Add jalapeños for extra heat if desired.
