- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup chocolate chips
- Optional: Flaky sea salt for sprinkling
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the tahini, butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold in the chocolate chips.
- Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing about 2 inches apart.
- Optionally, sprinkle a pinch of flaky sea salt on top of each dough ball.
- Bake for 10–12 minutes, or until the edges are golden and the centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Use well-stirred tahini to avoid separation of oil and solids.
- Do not overbake—the cookies will firm up as they cool.
