Taco Soup

A hearty and flavorful one-pot meal, Taco Soup is a Tex-Mex inspired dish featuring ground beef, beans, corn, and tomatoes, all simmered in a savory broth with taco seasonings.

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes with green chilies
  • 1 (8 oz) can tomato sauce
  • 1 packet taco seasoning
  • 1 packet ranch dressing mix
  • 2 cups beef broth or water
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, sour cream, green onions, tortilla chips

Instructions

  1. In a large pot over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is soft. Drain excess fat.
  2. Add the taco seasoning and ranch mix, stir to coat the beef.
  3. Stir in the beans, corn, diced tomatoes, tomato sauce, and beef broth.
  4. Bring to a boil, then reduce heat and simmer uncovered for 20-30 minutes to allow flavors to meld.
  5. Season with salt and pepper to taste.
  6. Serve hot with your choice of toppings like shredded cheese, sour cream, or tortilla chips.

Notes

  • This soup can be made in a slow cooker on low for 4-6 hours.
  • Use ground turkey or chicken as a leaner protein alternative.
  • Add jalapeños or hot sauce for extra spice.
  • Leftovers store well and taste even better the next day.
