Sweet Potato and Black Bean Tacos

These Sweet Potato and Black Bean Tacos are a delicious, hearty, and healthy vegetarian meal packed with flavor and perfect for a weeknight dinner.

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 (15-ounce) can black beans, drained and rinsed
  • 8 small corn tortillas
  • 1/2 cup crumbled feta or cotija cheese (optional)
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup diced red onion
  • 1 avocado, sliced
  • Juice of 1 lime
  • Sour cream or Greek yogurt for topping (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss the diced sweet potatoes with olive oil, cumin, chili powder, smoked paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes or until tender and slightly crispy.
  4. While sweet potatoes are roasting, warm the black beans in a small saucepan over low heat.
  5. Warm the tortillas in a skillet or microwave until pliable.
  6. Assemble the tacos by layering sweet potatoes, black beans, cheese (if using), cilantro, red onion, and avocado slices on each tortilla.
  7. Squeeze fresh lime juice over the tacos and top with sour cream or Greek yogurt if desired.
  8. Serve immediately and enjoy!

Notes

  • You can substitute corn tortillas with flour tortillas if preferred.
  • For a vegan version, omit the cheese and use a plant-based yogurt or no topping.
  • Adding a squeeze of lime enhances the flavor and freshness of the tacos.
