Summer Strawberry Goat Cheese Arugula Salad

A light and refreshing summer salad featuring sweet strawberries, creamy goat cheese, peppery arugula, and a tangy balsamic vinaigrette.

Ingredients

  • 4 cups fresh arugula
  • 1 cup sliced fresh strawberries
  • 1/2 cup crumbled goat cheese
  • 1/4 cup toasted pecans or walnuts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the balsamic vinegar, olive oil, honey (if using), salt, and pepper to make the dressing.
  2. In a large salad bowl, combine the arugula, sliced strawberries, and toasted nuts.
  3. Drizzle the dressing over the salad and gently toss to coat.
  4. Sprinkle crumbled goat cheese on top before serving.

Notes

  • For added protein, top with grilled chicken or chickpeas.
  • Use mixed greens if arugula is too peppery for your taste.
  • Best served fresh, immediately after assembling.
