- 1 cup strawberries, hulled and chopped
 
- 1/4 cup granulated sugar (for strawberries)
 
- 8 oz cream cheese, softened
 
- 1/2 cup granulated sugar
 
- 1 cup whole milk
 
- 2 cups heavy cream
 
- 1 tsp vanilla extract

- In a small bowl, mix chopped strawberries with 1/4 cup sugar and let sit for 15–20 minutes until syrupy. Mash slightly.
 
- In a large bowl, beat cream cheese until smooth.
 
- Add 1/2 cup sugar, milk, and vanilla extract. Mix until well combined and smooth.
 
- Stir in the heavy cream and mix until fully combined.
 
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes).
 
- During the last 5 minutes of churning, add the mashed strawberries and crushed graham crackers.
 
- Transfer the churned ice cream into a container, cover, and freeze for at least 4 hours or until firm.
