  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tbsp all-purpose flour
  • 1 1/2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • Fresh strawberries for garnish
  • Birthday sprinkles or decorations (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs and melted butter. Press into the bottom of the pan. Bake for 10 minutes and let cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and flour. Mix until combined.
  4. Fold in chopped strawberries and pour the batter over the crust.
  5. Bake for 55–65 minutes or until center is slightly jiggly. Turn off the oven, crack the door, and let it cool for 1 hour.
  6. Refrigerate for at least 4 hours or overnight.
  7. Warm the strawberry jam slightly and spread over the top of the cheesecake.
  8. Whip the heavy cream and powdered sugar to stiff peaks. Pipe or spread on top of the jam layer.
  9. Garnish with fresh strawberries and optional birthday decorations or sprinkles.
  10. Slice and serve chilled.

  • Ensure cream cheese is at room temperature to avoid lumps.
  • Let the cheesecake chill completely for best texture.
  • You can substitute strawberry jam with fresh strawberry compote.
