Split Pea Soup

A hearty and comforting split pea soup made with dried peas, vegetables, and optional smoked meat for added flavor. Perfect for a wholesome, warming meal.

Ingredients

  • 2 cups dried green split peas, rinsed
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth or water
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Optional: 1 cup diced ham or a smoked ham hock

Instructions

  1. Rinse and sort the split peas to remove any debris.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. Add garlic and cook for another minute.
  4. Stir in the split peas, broth or water, bay leaf, thyme, and optional ham.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 1 to 1.5 hours, stirring occasionally, until peas are tender and soup is thickened.
  6. Remove bay leaf and ham hock if used. Season with salt and pepper to taste.
  7. For a smoother texture, blend part of the soup using an immersion blender.
  8. Serve hot, optionally with crusty bread.

Notes

  • For a vegetarian or vegan version, omit the ham and use vegetable broth.
  • Soup thickens as it cools; add water or broth to reheat to desired consistency.
  • Can be made in advance and freezes well.
