Spaghetti Aglio e Olio

A classic Italian pasta dish made with spaghetti, garlic, olive oil, and chili flakes, offering a simple yet flavorful meal.

  • 400g spaghetti
  • 6 cloves garlic, thinly sliced
  • 120ml extra virgin olive oil
  • 1 tsp red chili flakes (adjust to taste)
  • Salt, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add sliced garlic to the oil and sauté until golden, being careful not to burn it.
  4. Stir in red chili flakes and cook for another 30 seconds.
  5. Add the drained spaghetti to the skillet along with a splash of the reserved pasta water.
  6. Toss well to coat the pasta in the garlic and chili-infused oil.
  7. Season with salt to taste, garnish with chopped parsley, and serve immediately.

Notes

  • Use good quality extra virgin olive oil for the best flavor.
  • Adjust chili flakes to your preferred heat level.
  • Do not overcook the garlic as it can turn bitter.
