Smash Burger Tacos

- 1 lb ground beef (80/20)
- 6 small flour tortillas
- 6 slices American cheese
- 1/2 cup pickles, sliced
- 1/4 cup finely diced onion
- 1 tbsp butter or oil for cooking
- Salt and pepper to taste
- 1/2 cup shredded lettuce
- 1/2 cup diced tomatoes (optional)
- For the sauce: 1/4 cup mayonnaise
- 1 tbsp ketchup
- 1 tsp mustard
- 1 tsp pickle juice
- 1/2 tsp garlic powder
- In a small bowl, mix the sauce ingredients: mayonnaise, ketchup, mustard, pickle juice, and garlic powder. Set aside.
- Divide ground beef into 6 equal balls.
- Heat a skillet or griddle over medium-high heat and add butter or oil.
- Place a tortilla on the hot surface, then put a beef ball on top. Smash it thin using a spatula, pressing it into the tortilla.
- Season with salt and pepper and cook for 2-3 minutes until the beef is browned.
- Flip the tortilla so the meat side is now on the skillet, and immediately add a slice of cheese on top of the meat. Cook another 1-2 minutes until the cheese melts.
- Remove from skillet and repeat for remaining tortillas and beef.
- Top each taco with the burger sauce, pickles, diced onions, lettuce, and optional tomatoes.
- Serve warm and enjoy.
Notes
- Use a burger press or spatula to properly smash the beef thin.
- For extra flavor, toast tortillas slightly before adding meat.
- Customize toppings with your favorite burger additions.
