Slow Cooker Greek Chicken

- 2 lbs boneless, skinless chicken breasts or thighs
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 4 cloves garlic, minced
- 1 tablespoon red wine vinegar
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 small red onion, sliced
- 1/2 cup chicken broth
- 1/2 cup crumbled feta cheese (optional for serving)
- Fresh parsley for garnish (optional)
- Place the chicken breasts or thighs in the bottom of the slow cooker.
- In a small bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, salt, pepper, and paprika.
- Pour the mixture over the chicken in the slow cooker.
- Add the sliced red onion and chicken broth to the slow cooker.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
- Once cooked, shred the chicken in the slow cooker or serve whole.
- Top with crumbled feta cheese and chopped parsley if desired before serving.
Notes
- Great served over rice, couscous, or in pita wraps.
- Store leftovers in an airtight container in the fridge for up to 4 days.
- Can be frozen for up to 2 months.
- Adjust herbs and lemon to taste.
