Slow Cooker Greek Chicken

A flavorful and easy slow cooker Greek chicken dish seasoned with herbs, garlic, and lemon. Perfect for serving over rice, in wraps, or with a fresh Greek salad.

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 small red onion, sliced
  • 1/2 cup chicken broth
  • 1/2 cup crumbled feta cheese (optional for serving)
  • Fresh parsley for garnish (optional)

Instructions

  1. Place the chicken breasts or thighs in the bottom of the slow cooker.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, red wine vinegar, oregano, thyme, salt, pepper, and paprika.
  3. Pour the mixture over the chicken in the slow cooker.
  4. Add the sliced red onion and chicken broth to the slow cooker.
  5. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  6. Once cooked, shred the chicken in the slow cooker or serve whole.
  7. Top with crumbled feta cheese and chopped parsley if desired before serving.

Notes

  • Great served over rice, couscous, or in pita wraps.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • Can be frozen for up to 2 months.
  • Adjust herbs and lemon to taste.
