Sesame Soba Noodle Salad

A light and flavorful Asian-inspired sesame soba noodle salad, perfect as a refreshing main dish or a side. Packed with crunchy vegetables and tossed in a tangy sesame dressing.

  • 8 oz soba noodles
  • 1 cup shredded carrots
  • 1 cup thinly sliced red bell pepper
  • 1 cup shredded red cabbage
  • 2 green onions, sliced
  • 1/4 cup chopped fresh cilantro
  • 2 tbsp toasted sesame seeds
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp grated fresh ginger
  • 1 clove garlic, minced
  • Optional: 1 tsp sriracha or chili garlic sauce

Instructions

  1. Cook soba noodles according to package instructions. Rinse under cold water and drain well.
  2. In a large bowl, combine the noodles, carrots, bell pepper, cabbage, green onions, and cilantro.
  3. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey (or maple syrup), ginger, garlic, and optional sriracha.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Sprinkle with toasted sesame seeds before serving.
  6. Serve chilled or at room temperature.

Notes

  • For a gluten-free version, use tamari and gluten-free soba noodles.
  • Can be made a day ahead for better flavor.
  • Add tofu, edamame, or grilled chicken for extra protein.
