- 14 oz (400 g) firm tofu, drained and pressed

- 2 tbsp olive oil

- 1/4 cup balsamic vinegar

- 2 tbsp maple syrup (or agave nectar)

- 1 clove garlic, minced

- 1/4 tsp salt

- 1/4 tsp black pepper

- Fresh basil leaves, for garnish (optional)

- Press the tofu for at least 15 minutes to remove excess moisture, then slice into 1/2-inch thick slabs.

- Heat olive oil in a large skillet over medium-high heat.

- Place tofu slices in the skillet and cook for 4–5 minutes on each side until golden and slightly crispy.

- In a small saucepan, combine balsamic vinegar, maple syrup, and minced garlic. Bring to a simmer over medium heat.

- Cook the glaze for 5–7 minutes, stirring occasionally, until it thickens slightly.

- Season tofu with salt and pepper, then drizzle the balsamic glaze over the top.

- Garnish with fresh basil leaves and serve immediately.

		Notes

- Pressing tofu is essential for achieving a firm, meaty texture.

- Adjust the sweetness of the glaze by adding more or less maple syrup.

- This dish pairs well with roasted vegetables or a fresh green salad.
