- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup blueberry puree
- Blue food coloring (optional, for midnight hue)
- 1/2 cup fresh blueberries (for topping)
- Edible silver glitter or stars (optional, for decoration)
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of the pan. Bake for 10 minutes and let cool.
- In a large bowl, beat cream cheese until smooth. Add sugar and mix until combined.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla and sour cream.
- Add blueberry puree and a few drops of blue food coloring, mixing until the batter reaches a rich, midnight-blue color.
- Pour the batter over the crust in the pan. Bake for 55–65 minutes or until the center is almost set.
- Turn off the oven, crack the door, and let the cheesecake cool inside for 1 hour. Then refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh blueberries and sprinkle with edible silver glitter or stars if desired.
