Raspberry Mousse Cups

Light and airy raspberry mousse served in elegant cups, perfect for a refreshing dessert or a special occasion treat.

Ingredients

  • 2 cups fresh raspberries (plus extra for garnish)
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp water
  • 1 tbsp unflavored gelatin
  • 1 cup heavy whipping cream
  • 1/2 tsp vanilla extract
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. In a saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook for 5-7 minutes until raspberries break down and mixture thickens slightly.
  2. Press the raspberry mixture through a fine sieve to remove seeds. Set aside to cool slightly.
  3. In a small bowl, sprinkle gelatin over water and let sit for 5 minutes to bloom.
  4. Gently heat the bloomed gelatin in the microwave or on the stovetop until fully dissolved, then stir into the raspberry puree.
  5. In a mixing bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  6. Fold the raspberry mixture into the whipped cream gently until fully combined.
  7. Spoon or pipe the mousse into serving cups and chill for at least 2 hours or until set.
  8. Garnish with fresh raspberries and mint leaves before serving.

Notes

  • You can substitute frozen raspberries if fresh ones are not available.
  • Adjust the sugar based on the sweetness of your raspberries.
  • Use clear dessert cups or shot glasses for a pretty presentation.
