Rainbow Marshmallow Bars

Rainbow Marshmallow Bars are a fun, colorful, and sweet no-bake treat made with fruity mini marshmallows, melted white chocolate, and a buttery base. Perfect for parties, holidays, or whenever you want a whimsical dessert!

  • 3 cups mini rainbow (fruit-flavored) marshmallows
  • 1½ cups white chocolate chips
  • 3 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 pinch salt

Instructions

  1. Line an 8×8-inch square pan with parchment paper or lightly grease it.
  2. In a medium saucepan over low heat, melt the butter and white chocolate chips together, stirring constantly until smooth.
  3. Remove from heat and stir in vanilla extract and salt. Let the mixture cool for 5–7 minutes so it doesn’t melt the marshmallows.
  4. Gently fold in the mini rainbow marshmallows until evenly coated.
  5. Pour the mixture into the prepared pan and press it down evenly with a spatula.
  6. Refrigerate for at least 2 hours or until set.
  7. Once firm, lift from the pan and cut into bars. Serve chilled or at room temperature.

Notes

  • Do not overheat the chocolate mixture to avoid melting the marshmallows when mixing.
  • You can add chopped nuts or sprinkles for extra texture and fun.
  • These bars are best stored in the refrigerator in an airtight container.
