Quinoa Avocado Salad

A refreshing and healthy Quinoa Avocado Salad packed with protein, fiber, and healthy fats. Perfect as a light lunch or a side dish.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed.
  3. Remove from heat and let quinoa cool completely.
  4. In a large bowl, combine cooled quinoa, diced avocados, cherry tomatoes, red onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Serve immediately or chill before serving.

Notes

  • For added protein, consider adding black beans or grilled chicken.
  • Use lemon juice instead of lime for a different citrus flavor.
  • Best served fresh, as avocado may brown over time.
