- 6 ripe plums, pitted and sliced
- 1/2 cup unsalted butter, divided
- 3/4 cup brown sugar
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup whole milk
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a saucepan, melt 1/4 cup butter with the brown sugar over medium heat. Pour the mixture into the prepared pan.
- Arrange the sliced plums cut side down over the sugar mixture in a circular pattern.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the remaining 1/4 cup butter and granulated sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Alternately add the flour mixture and milk to the wet mixture, beginning and ending with the flour.
- Pour the batter over the plums and spread evenly.
- Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then invert onto a serving plate. Let cool completely before serving.
Notes
- Use ripe but firm plums for best texture.
- Can be served warm with whipped cream or vanilla ice cream.
