Plum Upside‑Down Cake

A deliciously moist and fruity dessert, this Plum Upside-Down Cake features caramelized plums layered beneath a tender vanilla cake, perfect for showcasing seasonal stone fruits.

  • 6 ripe plums, pitted and sliced
  • 1/2 cup unsalted butter, divided
  • 3/4 cup brown sugar
  • 1 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup whole milk

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a saucepan, melt 1/4 cup butter with the brown sugar over medium heat. Pour the mixture into the prepared pan.
  3. Arrange the sliced plums cut side down over the sugar mixture in a circular pattern.
  4. In a bowl, whisk together flour, baking powder, and salt.
  5. In another bowl, beat the remaining 1/4 cup butter and granulated sugar until light and fluffy.
  6. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  7. Alternately add the flour mixture and milk to the wet mixture, beginning and ending with the flour.
  8. Pour the batter over the plums and spread evenly.
  9. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool in the pan for 10 minutes, then invert onto a serving plate. Let cool completely before serving.

Notes

  • Use ripe but firm plums for best texture.
  • Can be served warm with whipped cream or vanilla ice cream.
  • Store leftovers in an airtight container for up to 3 days.
