Pineapple BBQ Chicken with Bacon

A sweet and savory dish combining juicy chicken with tangy pineapple BBQ sauce and crispy bacon for a flavorful meal.

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple BBQ sauce
  • 4 slices bacon
  • 1 cup crushed pineapple (drained)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, garlic powder, and onion powder.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken on both sides until golden brown, about 2-3 minutes per side.
  4. In a small bowl, mix pineapple BBQ sauce with crushed pineapple.
  5. Spoon the pineapple BBQ mixture over the chicken breasts in the skillet.
  6. Lay a slice of bacon over each piece of chicken.
  7. Transfer skillet to the preheated oven and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  8. Optional: Broil for 2-3 minutes to crisp the bacon.
  9. Remove from oven, garnish with parsley if desired, and serve hot.

Notes

  • Use turkey bacon for a lighter version.
  • Can substitute thighs for breasts if preferred.
  • Pairs well with rice or roasted vegetables.
