Pear & Ginger Cake

A moist and warmly spiced pear and ginger cake that combines the sweetness of ripe pears with the zing of fresh ginger, perfect for tea time or dessert.

  • 2 ripe pears, peeled, cored and diced
  • 1 tbsp lemon juice
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup plain yogurt or sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1 tbsp freshly grated ginger

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. Toss the diced pears with lemon juice and set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, ground ginger, and cinnamon.
  4. In a large bowl, cream the butter with brown and granulated sugars until light and fluffy.
  5. Beat in the eggs one at a time, then mix in the vanilla extract and freshly grated ginger.
  6. Add the yogurt (or sour cream) and mix until combined.
  7. Gradually stir in the dry ingredients until just incorporated.
  8. Fold in the diced pears gently.
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use ripe but firm pears for best texture.
  • Serve with a dollop of whipped cream or vanilla ice cream.
  • Store in an airtight container for up to 3 days.
