Peach Salsa

- 3 ripe peaches, pitted and finely diced (about 2 cups)
- 1/2 small red bell pepper, finely diced (about 1/4 cup)
- 1/3 cup finely diced red onion
- 1 jalapeño, seeded and minced
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp fresh lime juice (about 1 lime)
- 1/4 tsp fine sea salt, or to taste
- Optional: 1 tsp honey or agave for extra sweetness
- Combine peaches, bell pepper, red onion, jalapeño, and cilantro in a medium bowl.
- Drizzle with lime juice and sprinkle in the salt (and honey/agave, if using).
- Gently toss until everything is evenly coated.
- Taste and adjust salt or lime as desired.
- Cover and refrigerate at least 15 minutes to let flavors meld. Serve chilled.
Notes
- For smoky depth, grill or broil peach halves for 2 minutes before dicing.
- Substitute nectarines or mango for peaches when out of season.
- Great topping for fish tacos, grilled chicken, or burrata.
- Salsa is best the day it’s made but keeps 2 days refrigerated.
