Peach Galette

A rustic French dessert featuring juicy peaches encased in a flaky, buttery crust. This peach galette is simple to make and bursting with summer flavor.

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 24 tbsp ice water
  • 45 ripe peaches, sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

  1. In a bowl, combine flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Add ice water a tablespoon at a time until the dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. In a large bowl, mix sliced peaches with sugar, cornstarch, vanilla extract, cinnamon, and lemon juice.
  5. Roll out the dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet.
  6. Place the peach filling in the center, leaving a 2-inch border. Fold the edges of the dough over the fruit, pleating as needed.
  7. Brush the crust with beaten egg and sprinkle with coarse sugar.
  8. Bake for 35-40 minutes, until the crust is golden and the filling is bubbly.
  9. Cool slightly before serving. Serve warm or at room temperature.

Notes

  • Use ripe but firm peaches for best results.
  • The galette can be served with vanilla ice cream or whipped cream.
  • For extra flavor, add a splash of almond extract to the filling.
