Pasta Tomato

- 200g pasta (spaghetti or penne)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 400g canned crushed tomatoes
- 1 tsp sugar
- Salt and pepper to taste
- Fresh basil leaves, chopped (optional)
- Grated Parmesan cheese for serving (optional)
- Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add crushed tomatoes, sugar, salt, and pepper. Stir well and let simmer for 10–15 minutes, stirring occasionally.
- If sauce is too thick, add some reserved pasta water to reach desired consistency.
- Add the cooked pasta to the sauce and toss until well coated.
- Serve hot, garnished with fresh basil and Parmesan if desired.
Notes
- You can add chili flakes for a spicy kick.
- Use fresh tomatoes instead of canned for a lighter flavor.
- For a richer sauce, stir in a knob of butter before serving.
