Mini Quiches

Mini quiches are individual-sized savory tarts filled with eggs, cheese, and various mix-ins like vegetables, meats, or herbs. They are perfect for breakfast, brunch, or appetizers.

Ingredients

  • 6 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1/4 cup diced cooked bacon or ham (optional)
  • 1/4 cup chopped spinach or bell pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 sheet puff pastry or 12 mini tart shells

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a mini muffin tin or place tart shells on a baking sheet.
  2. If using puff pastry, cut into 12 equal pieces and press into the muffin tin to form cups.
  3. In a mixing bowl, whisk together eggs, milk, salt, and pepper.
  4. Divide the cheese, meat, and vegetables evenly among the prepared pastry cups.
  5. Pour the egg mixture over the fillings, filling each cup almost to the top.
  6. Bake for 18–22 minutes, or until the quiches are puffed and golden brown.
  7. Let cool slightly before removing from the tin. Serve warm or at room temperature.

Notes

  • You can customize with your favorite vegetables or meats.
  • Great for meal prep—store in the fridge for up to 4 days.
  • Can be frozen and reheated in the oven or microwave.
