Mini Pavlovas with Berries

Mini Pavlovas with Berries are individual meringue nests that are crisp on the outside and soft on the inside, topped with whipped cream and fresh berries. A light and elegant dessert perfect for summer gatherings or special occasions.

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 tsp white vinegar
  • 1 tsp cornstarch
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract (for whipped cream)
  • 2 cups mixed fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper.
  2. In a clean bowl, beat the egg whites until soft peaks form.
  3. Gradually add granulated sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
  4. Gently fold in the vinegar, cornstarch, and vanilla extract.
  5. Spoon meringue into small nests on the prepared baking sheet, leaving a slight indent in the center of each.
  6. Bake for 60-70 minutes until dry to the touch but still pale. Turn off oven and let cool inside with door ajar.
  7. In a bowl, whip the cream with powdered sugar and vanilla extract until soft peaks form.
  8. Once meringues are cool, top each with whipped cream and fresh berries.
  9. Serve immediately or chill for up to 2 hours before serving.

Notes

  • Ensure no egg yolk is mixed in with the whites to achieve proper meringue peaks.
  • Pavlovas can be stored unfilled in an airtight container for up to 2 days.
  • Use any combination of seasonal fruits.
