Mexican Pizza

A delicious fusion of Mexican and Italian cuisines, Mexican Pizza is a crispy tortilla base topped with seasoned ground beef, beans, cheese, and fresh toppings, then baked to perfection.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (16 oz) refried beans
  • 8 small flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup chopped green onions
  • Vegetable oil for frying

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water. Simmer for 5 minutes until thickened.
  4. In a separate pan, heat refried beans until warm.
  5. In a skillet, lightly fry tortillas in oil until golden and crispy. Drain on paper towels.
  6. Place 4 tortillas on a baking sheet. Spread refried beans on each, followed by a layer of seasoned beef. Top with another tortilla.
  7. Sprinkle cheese on top layer and add tomatoes, olives, and green onions.
  8. Bake in preheated oven for 10 minutes or until cheese is melted and bubbly.
  9. Remove from oven and let cool slightly before slicing and serving.

Notes

  • You can use ground turkey or chicken instead of beef.
  • Add jalapeños for extra spice.
  • Serve with sour cream, guacamole, or salsa on the side.
