Mermaid Tail Cupcakes

Whimsical and colorful mermaid tail cupcakes, perfect for themed parties or birthdays. These vanilla cupcakes are topped with vibrant buttercream swirls and adorned with edible mermaid tails.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • ½ cup whole milk
  • Buttercream frosting (various colors)
  • Edible mermaid tail toppers (fondant or candy)
  • Food coloring (blue, purple, pink)
  • Sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat the butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with milk, starting and ending with flour mixture. Mix until just combined.
  6. Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  7. Bake for 18–20 minutes or until a toothpick inserted comes out clean. Let cool completely.
  8. Divide buttercream into bowls and color each with desired food coloring.
  9. Using a piping bag fitted with a star tip, swirl the colored buttercream on each cooled cupcake.
  10. Top with mermaid tail toppers and sprinkles if using.

Notes

  • Use gel food coloring for more vibrant buttercream colors.
  • Cupcakes can be made a day in advance and stored in an airtight container.
  • Mermaid tails can be made with fondant and silicone molds for a DIY touch.
