Mediterranean Chickpea Salad

A refreshing and nutritious Mediterranean Chickpea Salad made with fresh vegetables, herbs, and a tangy olive oil dressing. Perfect as a side dish or light meal.

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  2. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Let the salad sit for 10-15 minutes before serving to allow flavors to meld.
  5. Serve chilled or at room temperature.

Notes

  • You can add diced avocado for extra creaminess.
  • Use fresh lemon juice instead of vinegar for a citrus twist.
