- 1 cup heavy cream
- 8 oz mascarpone cheese
- 1/3 cup granulated sugar
- 2 tsp vanilla extract
- 1 tbsp matcha powder (plus extra for dusting)
- 3/4 cup hot water
- 2 tbsp honey or sugar (optional, for sweetening matcha soak)
- 12–16 ladyfinger cookies (savoiardi)
- Pinch of salt
- In a bowl, whisk together hot water, 1 tbsp matcha powder, and honey (if using) until fully dissolved. Let cool.
- In another bowl, beat heavy cream with sugar and vanilla extract until soft peaks form.
- Add mascarpone cheese and a pinch of salt to the whipped cream mixture and fold gently until smooth and fully combined.
- Briefly dip each ladyfinger into the cooled matcha soak and place a layer at the bottom of your jars or glasses.
- Spread a layer of the mascarpone mixture over the ladyfingers.
- Repeat the layers until the jars are full, finishing with mascarpone on top.
- Chill the jars in the refrigerator for at least 2 hours or overnight to set.
- Before serving, dust the tops with additional matcha powder.
Notes
- Use ceremonial grade matcha for best flavor and color.
- Do not over-soak the ladyfingers to avoid sogginess.
- Chilling overnight enhances the flavor and texture.
