Matcha Custard Tartlets

Delicate and creamy matcha custard tartlets with a buttery crust, perfect for a sophisticated dessert or tea-time treat.

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup powdered sugar
  • 1 large egg yolk
  • 12 tbsp cold water
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 2 tbsp matcha green tea powder
  • 1/3 cup granulated sugar
  • 3 large egg yolks
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin or tartlet pan.
  2. In a food processor, combine flour, powdered sugar, and butter. Pulse until mixture resembles coarse crumbs.
  3. Add egg yolk and cold water, mixing just until dough comes together. Chill for 30 minutes.
  4. Roll out dough and press into tartlet pans. Prick the base with a fork.
  5. Bake for 12-15 minutes or until lightly golden. Let cool.
  6. In a saucepan, whisk together milk, cream, and matcha powder over medium heat until warmed through.
  7. In a separate bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  8. Gradually pour warm matcha milk into egg mixture, whisking constantly.
  9. Return mixture to the saucepan and cook over medium heat, stirring constantly, until thickened.
  10. Remove from heat, stir in vanilla extract, and strain custard through a sieve for smoothness.
  11. Fill cooled tartlet shells with matcha custard. Refrigerate for at least 2 hours to set.
  12. Optionally, dust with extra matcha powder or garnish with berries before serving.

Notes

  • You can make the tart shells a day in advance.
  • For a smoother custard, always strain after cooking.
  • Adjust sweetness based on the brand of matcha used.
