- 1 1/2 cups graham cracker crumbs
 
- 1/4 cup granulated sugar
 
- 1/2 cup unsalted butter, melted
 
- 16 oz cream cheese, softened
 
- 3/4 cup granulated sugar
 
- 2 large eggs
 
- 1/2 cup sour cream
 
- 1/4 cup ube halaya (purple yam jam)
 
- 1/2 tsp ube extract
 
- 1 tsp vanilla extract
 
- 1 tbsp all-purpose flour

- Preheat the oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper.
 
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes and let cool.
 
- In a large bowl, beat cream cheese until smooth. Add 3/4 cup sugar and mix until well combined.
 
- Beat in eggs one at a time. Add sour cream, ube halaya, ube extract, vanilla extract, flour, and salt. Mix until smooth and fully incorporated.
 
- Pour the ube cheesecake mixture over the cooled crust and spread evenly.
 
- Bake for 40–45 minutes, or until the center is set and only slightly jiggles.
 
- Allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
