Magical Ube Cheesecake Bars

Magical Ube Cheesecake Bars are a vibrant and creamy dessert made with a buttery graham cracker crust, luscious ube-flavored cheesecake layer, and a visually striking purple hue, perfect for any celebration or sweet craving.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/4 cup ube halaya (purple yam jam)
  • 1/2 tsp ube extract
  • 1 tsp vanilla extract
  • 1 tbsp all-purpose flour
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large bowl, beat cream cheese until smooth. Add 3/4 cup sugar and mix until well combined.
  4. Beat in eggs one at a time. Add sour cream, ube halaya, ube extract, vanilla extract, flour, and salt. Mix until smooth and fully incorporated.
  5. Pour the ube cheesecake mixture over the cooled crust and spread evenly.
  6. Bake for 40–45 minutes, or until the center is set and only slightly jiggles.
  7. Allow to cool completely at room temperature, then refrigerate for at least 4 hours or overnight.
  8. Cut into bars and serve chilled.

Notes

  • For a more vibrant color, you can add a drop of purple food coloring.
  • Make sure cream cheese is fully softened to prevent lumps.
  • Store leftovers in the refrigerator for up to 5 days.
